I noticed the Dark Reader extension (8M+ users) rendition of the dark theme isn't the best solution, particularly on the logo of the the site, it hides the logo completely:
There seems to be an open issue on just-the-docs theme about dark theme: just-the-docs/just-the-docs#1223.
The site listed in the issue (https://github.com/mmcesim/mmcesim.org) has implement their dark theme toggle alongside with a dark theme but isn't enabled by default for systems using dark theme. I have never really use Jekyll myself but it should be possible to port the theme from that repository to this one.
