Update poetry to more recent version.

In #288 the pyproject.toml was update to comply to current standards.
However, we still use a version of Poetry that expects data to be stored in some obscure tool.poetry container in the pyproject.toml.

Changing this requires some special care when it comes to tool.poetry.homepage. I remember it wasn't straightforward to update in another project. If we mess it up, the URL in the hermes user agent will be gone 😅

If we get all the warnings fixed, there should be barely any configuration parameters that stop us from switching to anther build tool thanks to common standards!
