point Welcome to VPython links at the M&I trinket server

trinket.io shuts down Aug 31 2026. Repoint the IDE home page course
link and brand link (now "M&I Trinket") to
trinket.matterandinteractions.org, and update the generated VPythonDocs
copy as a stopgap (docs are moving to webVPythonDocsHome and won't be
rebuilt from here).
