docs: use mira-test-data Docker image for test data download - #117

Replace the ShareFile tiny_test download + manual unzip/move steps in the installation vignettes with the cdcgov/mira-test-data:0.0.1 container, which downloads and formats the test run into ./mira_run/ in one command.

docker run --rm -v "$PWD:/data" cdcgov/mira-test-data:0.0.1with output in
./mira_run/, matching the wording already in README.md and pkgdown/index.md.
