ci: add automated test coverage reporting

Overview

This PR adds automated test coverage reporting to the CI pipeline so maintainers can see coverage results on every run. Coverage is generated during CI, uncovered areas are surfaced in the report, and existing test execution is left unchanged.

  • Add the coverage script/dependency wiring needed to generate coverage reports from the existing Jest setup.

• [MODIFY] dashboard/jest.config.cjs

  • Enable coverage collection and reporters so reports identify uncovered areas, without altering how tests are executed.
