CI: run the iOS jobs on the latest stable Flutter - #6

Conversation
Flutter 3.35.6 can't attach to the example on the runner's Xcode 26.6 /
iOS 26.5 simulator ("Error waiting for a debug connection: The log
reader failed unexpectedly"), so the integration tests time out after
12 minutes without running. The iOS jobs check the native side; the Dart
job keeps testing the 3.35.6 floor.

Why
Since the floor moved to Flutter 3.35.6 (#4), the iOS integration tests can't run on
macos-latest: Flutter installs the example on the simulator but never attaches to it (Error waiting for a debug connection: The log reader failed unexpectedly) and times out after 12 minutes with 0 tests run. The runner now has Xcode 26.6 / iOS 26.5. #4's own CI runs were cancelled, so this hadn't shown; the last green iOS runs used Flutter 3.38.1. It happens on #5 too, whose change doesn't touch the integration tests. What
The two iOS jobs use the latest stable Flutter instead of
FLUTTER_VERSION. They check the native side (Swift unit tests, integration tests with CocoaPods and Swift Package Manager), where the Flutter version matters least. The Dart job still analyzes and tests against the 3.35.6 floor, and Android is unchanged.
