Prepare v1.6.3 with the security fixes merged since v1.6.2. Bump the main Helm chart to 0.4.6 and processor charts to 0.1.3, align their application versions and the Iceberg processor's platform dependency and build pin, and update the broker image and compose examples.
Release notes cover the Go 1.26.10 toolchain for CVE-2026-111943 (crypto/x509), gRPC 1.83.2 for GHSA-2v4p-qf9q-27wj, and the dependency updates for the open Dependabot alerts.
Validation:
make commit-checkpassed everything except the local CodeQL step, because the CodeQL CLI is not installed on this machine; CI runs CodeQL. The v1.6.3 tag will be pushed after this PR is approved and merged; its workflow publishes all images for amd64/arm64 and creates the GitHub release.
