Bumps the workspace version from 0.4.0 to 0.4.1. That covers all crates and pypasteur, whose version comes from the workspace. Also updates Cargo.lock and moves the Unreleased changelog entries under ## 0.4.1.

This is a patch release for the fixes in #6:

• JitterSimulator.transform before fit now errors instead of applying zero noise (Rust and pypasteur).
• The pasteur-model README example uses the Option<usize> positive class index.
• OnnxModel::from_file positive-class-index errors name the parameter.
• New pasteur-cli --version and pypasteur.__version__.

The jitter change turns a silent wrong result into an error, so callers that relied on it were already getting bad scores. No other API changes.

Checks

• cargo fmt --all --check passes
• cargo clippy --workspace --locked -- -D warnings passes
• pasteur-core and pasteur-hf tests pass locally. Tests for the crates that link ONNX Runtime could not link on the local machine (glibc 2.35; the prebuilt ORT needs 2.38), so CI covers those.
