feat: improve route quotes and Stellar network validation

Summary

This PR improves BridgeWise routing, quote transparency, and Stellar network configuration safety by implementing route fee breakdowns, route confidence scores, and network configuration validation.

Implement route fee breakdown (#1138)

• Add support for exposing the fee components associated with a route.
• Improve quote transparency by separating route fees from the overall quote.

Support route confidence scores (#1139)

• Add support for route confidence scores.

Implement Stellar network configuration validation (#1192)

• Add validation for Stellar network configuration.
• Validate required network settings before they are used by Stellar/Soroban integrations.
• Improve error handling for invalid or incomplete network configuration.
