docs: 1.0.0 changelog, current demo script and submission checklist - #27

CHANGELOG covers PRs #1-#26 as the 1.0.0 submission release. DEMO.md shows follow-along, Hindi subtitles, Insights CSV, the LMS embed and the under-the-hood panel, with a Cloudinary credit check before recording. The checklist adds the credit decision, the trials decision and the demo link. README mentions the CSV export.
