The star history chart in the README and docs was broken due to GitHub stargazer API restrictions. Update it to use the new star-history domain, which no longer requires an API token and keeps the chart working for our stargazers.

The star history chart in the README and docs/index.md is currently broken due to GitHub stargazer API restrictions. This change updates it to the new star-history endpoint, which uses a different data source that requires no API token. The chart will work again so our stargazers can keep tracking the project's growth.
