build(deps): bump Vite to 8 (#9) - #17

Vite 8 SSR fails bare `@import 'tailwindcss'` package-root style resolution (vite#23096), so pin `tailwindcss/index.css`. Also bump `@vitejs/plugin-react` for its Vite 8 peer range. TS 7 left for later. Co-authored-by: Cursor <cursoragent@cursor.com>
