Should there be a pinned rust version at or above msrv for the ffi layer #1009

Doing some work in our CI in payjoin we realized that the msrv pinning to match our rust code was mostly unecessary payjoin/rust-payjoin#1572 (comment). Do you have any concrete reason for choosing the latest stable when considering reproduce-ability in general as opposed to a fixed version. Assuming I am reading it right and you do default to the latest stable
