Update setup instructions

Fixes #131.

• Added uv and short description of dataset - let me know if you want more details.
• For conda, I synced the instruction with the README in paralell-python-workshop
• I also reorganized the structure a bit; open to alternatives.
• I broke some long lines into multiples.
