FXAA: yes, we'll add it. It's a light filter that smooths jagged edges in a single quick step, so it fits on the Switch. It will be an option in the in-game menu, off by default, so nothing changes for anyone who doesn't turn it on. We also want it to smooth the 3D world without blurring the HUD and text, so we'll apply it before the game draws its interface. The menu will note that it costs a bit of performance, so players can decide whether it's worth it for them.
SMAA: not for now. SMAA usually looks a little better than FXAA, but it's a lot heavier: it takes several passes over the image instead of one. The Switch's GPU is already the limiting factor for this port. To hold 30 fps, the game sometimes drops its rendering resolution on the fly. Any extra GPU work means a blurrier picture more often, and with SMAA that loss would likely cancel out what it gains. Our rule is to get speed from the code, not from overclocking, so we can't just push the hardware harder to make room for it.
If performance improves enough later, we'll gladly look at SMAA again. I'll update this issue when FXAA is in a build.
FXAA is now in the code (#53). It's an option in the in-game menu (Switch tab, "Edge smoothing (FXAA)"), off by default, and it keeps the HUD and text sharp. On the console it costs about 2 ms of GPU time per frame and held a steady 30 fps in our tests. This issue will be closed once FXAA ships in the next release, v0.4.8. As explained above, SMAA isn't planned for now.
FXAA is now merged into main (#53) and will ship in v0.4.8. Turn it on in the in-game menu: Switch tab, Picture, "Edge smoothing (FXAA)" (off by default). Since the last update it was also tested at a lower internal resolution (0.75, as dynamic resolution uses): the HUD stays sharp and complete there too.

Thanks for the suggestion! We looked into both.

Note: the next release will be v1.0.0 instead of v0.4.8 (milestone renamed). This fix ships in it.
