chore: remove unused @github/copilot-sdk dep - #32

The @github/copilot-sdk package is listed in apps/api/package.json but never imported by any source file. Removing it as part of preparing the pro-side migration to @anthropic-ai/claude-agent-sdk. Co-Authored-By: Claude Opus 4.7 (1M context) <noreply@anthropic.com>
