New docs/walkthrough-carreau.md case study on a_remake_dhr2.json (high-MW linear polymer, 25 C): Carreau fit of the flow curve (eta0=1.99 Pa.s, lambda=0.199 s, n=0.414), Cox-Merz validation with the frequency sweep (2.3% agreement) and Delaware-Rutgers validation with the amplitude sweep (9% agreement). Includes mermaid workflow diagram with EPUB SVG fallback. Closes #25.
