Adapts the scanner to the catalog/data-split duckdb patch (serenedb/duckdb#73), where a StandardEntry no longer exposes its schema as a member: altering a schema chains a new entry, so entries resolve the current version through ParentSchema() instead of a reference captured at construction.
Mechanical, seven call sites, no behaviour change. Paired with the serenedb branch mbkkt/split-catalog-data.
