fix(build): link darwin/arm64 release against libwasmvm v2.3.5

Summary

v8.0.0 release failed on darwin/arm64: Wasmer 7 (libwasmvm v2.3.5) needs ___unw_add_find_dynamic_unwind_sections, missing from the cross toolchain's macOS 12 SDK. Fix: resolve it at runtime (-Wl,-U) for darwin/arm64 only; macOS 14+ provides it. Other builds unchanged.

Testing

• make release locally: all four binaries build.
• darwin/arm64 binary on macOS: libwasmvm 2.3.5, and a local chain stored + executed a wasm contract.
