Stop distributing config files and create them programmatically if missing

The existence of default config files (.ini and .xml) in the source tree is a bit of a nuisance for both development and users who occasionally overwrite their configs when extracting a new version of Supermodel.

Leaving this here as a reminder to have these generated by code when they are missing. Can rename the existing ones to e.g. Supermodel-Example.ini, Games-Example.xml, etc.
