Use {{% %}} for highlight blocks at the top level so Markdown
(bold, italics, links, footnotes) renders correctly, and {{< >}}
only when nested inside another %-delimited shortcode like
booking-section.

Switch the booking collection's editor_components from highlight-raw
to highlight so the CMS inserts {{% highlight %}} instead of
{{< highlight >}}, matching the top-level delimiter convention.

When on booking pages, the highlight shortcode syntax depends on the position. If outside a
booking-section, it should be{{% %}}. Inside of booking sections, it has to be{{< >}}. The pages with invalid definitions are updated. The CMS configuration was updated to handle it automatically.Closes #1250
